  • 1 cup foxtail millet (navane/kangni) 2 tbsp oil or ghee 1 tsp mustard seeds 1 tsp urad dal (split black gram) 1 tsp chana dal (Bengal gram) 1 onion (finely chopped) 1–2 green chilies (slit) 1 inch ginger (grated) 1 carrot (chopped) ½ cup beans (chopped) 1 sprig curry leaves 2 ½ cups hot water Salt to taste Fresh coriander & lemon wedges for garnish

Foxtail Millet Upma

Process & Steps (30 minutes):

  1. Rinse & soak millet for 15 minutes; drain.

  2. Heat oil/ghee in a pan, temper with mustard seeds, urad dal, and chana dal until golden.

  3. Add onion, ginger, chilies, and curry leaves; sauté until fragrant.

  4. Toss in vegetables and cook 3–4 minutes.

  5. Add drained foxtail millet, stir, and pour in hot water.

  6. Season with salt, cover, and cook on low flame for 10–12 minutes until water is absorbed.

  7. Rest for 5 minutes; fluff gently with a fork.

  8. Garnish with coriander and a squeeze of lemon.
